ABSTRACT:
A process for the removal of .beta.-cyclodextrin from egg yolk or egg yolk plasma, wherein the material to be treated is mixed and incubated with an .alpha.-amylase selected from the .alpha.-amylases formed by or derived from micro-organisms of the group Aspergillus niger, Aspergillus oryzae, Bacillus polymyxa, Bacillus coagulans and Flavobacterium or domestic hog pancreas amylase.
