ABSTRACT:
A process for producing an .alpha.-lactalbumin-enriched fraction from whey is disclosed. The process involves heating pH-adjusted whey to a temperature sufficient to cause aggregation of .beta.-lactoglobulin molecules, and fractioning the whey using ultrafiltration or microfiltration, the .alpha.-lactalbumin-enriched fraction obtained by the process is useful for making breast milk substitutes and other nutritional compositions.
