A dry powder composition comprising vital gluten modified by reaction with a non-toxic chelating agent selected from the group consisting of ethylene-diaminetetraacetic acid, a non-toxic metal salt thereof, citric acid and a non-toxic alkali metal citrate, and process for the production thereof.
