ABSTRACT:
Jams including jellies, preserves, purees, fruit sauces and the like obtained by subjecting a mixture of raw materials to a high pressure treatment without heating is disclosed. The high pressure treatment is conducted at room temperature and a pressure of 500 to 10,000 kg/cm.sup.2 for 1 to 1,800 minutes.
