ABSTRACT:
A method for producing a water-based bran, such as oat bran, snack product or chip wherein a doughlike mixture of oat bran, masa, gluten flour and water is mixed , and fried to produce a stable dry chip or snack product. The unique process forms a stable chip which delivers large doses of oat bran to the consumer. The product, when sold in 31/2 oz. portions delivers 1 oz. of oat bran exceeding the minimum recommended daily requirement for oat bran.
