Apparatus30for production of food products, which apparatus30comprises a feed section40and a compression section41, the feed section40comprising open channels50into which food for processing is introduced by a plurality of regulating helixes70and drive elements51in the channels50for moving the food along the channels50, the compression section41lying adjacent the feed section40such that food is moved by the drive elements51from the channels50into the compression section41, the compression section41comprising tubes66of desired cross-section and length, whereby in use food is moved along the channels50and into the compression section41by the drive elements51, subjected to a desired compression in the compression section41and then leaves the compression section41at the end thereof remote from the feed section40. Improved quality food products can thereby be provided.
