A method and apparatus for instantly tenderizing meat employs a shock wave produced by an underwater electrical discharge through an electrode gap from a capacitor bank. To optimize the shock wave shape for tenderizing, the electrical pulse may be shaped by using timing the discharge of the capacitor bank.
