A novel L-arabinose isomerase active enzyme and its corresponding gene, derived from a thermophilic source are provided. The enzyme is suitable for the production of D-tagatose, a useful low-calorie sweetener. The enzyme may be obtained from aThermoanaerobacterspecies such asThermoanaerobacter mathranii.
