ABSTRACT:
An apparatus and method for reducing the water content of honey is disclosed. The apparatus includes a housing for the honey, a rotatable high surface area body upon which the honey forms a thin film and means for supplying a nonturbulent stream of ambient pressure 40.degree. C. to 75.degree. C. air to said housing so as to reduce the water content of the thin film of honey. The method involves rotating the rotatable body so as to form a thin film of honey and passing a nonturbulent stream of ambient pressure 40.degree. C. to 75.degree.
