ABSTRACT:
A process for the treatment of fruits or vegetables after harvesting by heating to a temperature of 40.degree. to 60.degree. C. a treatment composition including, in an aqueous vehicle, a terpenic compound, and then bringing the fruits or vegetables into contact with the composition at such temperature for a period of less than or equal to 10 minutes.
