ABSTRACT:
The present invention provides a process for the production of fat- and cholesterol-reduced powdered products based on eggs with a high content of phospholipids by extraction with compressed gases, wherein the powdered starting material is extracted with a solvent mixture consisting of propane and carbon dioxide with a mixing ratio of 95/5 to 5/95% by weight at a pressure of <300 bar and at s temperature of <70.degree. C.,
