ABSTRACT:
Process for the preparation of a low-glucose digestion product from inulin-containing parts of plants, the parts of plants being comminuted, and the inulin being degraded to fructose or fructose oligomers. The process comprises a suspension of the comminuted parts of plants in an aqueous medium, or a pressed juice or extract obtained therefrom, being heated, without removal of the inulin, at temperatures up to 100.degree. C., until the enzymes intrinsic to the plant have substantially been inactivated, whereupon, after cooling, inulinase is added to the suspension or the pressed juice or the extract.
