ABSTRACT:
Lactose, especially derived from whey, is efficiently hydrolysed to glucose and galactose by contact in water with a solid, insoluble, stongly acidic ion exchange resin based on certain cross-linked polystyrenes or certain carbohydrates. The products are valuable in food manufacture.
