ABSTRACT:
Reacting a partial polyol monocarboxylic acid ester with an acidic anhydride in the presence of a perfluoroalkyl sulfonic acid catalyst to produce specific complete mixed polyol esters, especially synthetic cocoa butter, with substantially no ester group rearrangement.
