A process for the production of isomaltulose whereby glucose and fructose are reacted to form isomaltulose in the presence of an enzyme which hydrolyzes a polysaccharide or oligosaccharide at the .alpha.-1,4 and/or .alpha.-1,6-glucoside linkage thereof by an exo-type cleavage.
