ABSTRACT:
A process for producing alpha-cyclodextrin using cyclomaltoextrin glucanotransferase is disclosed. The enzyme is obtained from Bacillus macerans. Starch hydrolysate is treated with the enzyme at a temperature of between about 15.degree. C. and about 40.degree. C. wherein the conversion is performed in the presence of cyclohexane and substantially no gamma-cyclodextrin is produced. The resulting alpha-cyclodextrin is then recovered.
