ABSTRACT:
A method of peeling root vegetables by dipping the vegetables into hot aqueous sodium hydroxide, and drying them at 100.degree.-150.degree.C for 2-5 minutes by intense application of a drying gas, such as hot air or superheated steam, whereupon the root vegetables are allowed to rest for 3-10 minutes at ambient temperature.
