ABSTRACT:
A novel cyclomaltodextrin transferase (EC. 2, 4, 1, 19) which preferentially produces .beta.-cyclodextrin from starch or partial hydrolysate thereof and produces a carbohydrate containing .beta.-cyclodextrin as the main components, and a method for preparation thereof comprising cultivating a cyclomaltodextrin glucanotransferase producing microorganism belonging to a moderate thermophile B. coagulans are provided.
