ABSTRACT:
Simple and efficient methods for extracting high levels of .beta.-glucans from cereal sources are disclosed. The method employs a strong base, such as sodium hydroxide as an initial solvent. If desired, the extract can be further purified to render a .beta.-glucan preparation which can be used directly or stored for future use.
