ABSTRACT:
A piece of uncooked beef in the 10-16 pound range is initially pumped and then vacuum sealed within an oven-ready bag in which it is cooked for a period of time sufficient to provide a uniformly rare condition throughout the entire meat product, and wherein the product meets the Federal standards for a safe product even though the maximum internal temperature of the product does not exceed 140.degree.F.
