ABSTRACT:
A method for the production of an imnmunostimulant milk product, characterized in that bioconversion is carried out on or a milk substrate with the aid of aBifidobacteriumculture by keeping said substrate in contact with said culture in conditions which are unfavorable with respect to the fermentation ofBifidobacterium. The invention also relates to milk foods and products obtained by said method.
