ABSTRACT:
A knife assembly for use in a chopping apparatus of the type having a rotatable disc and an opening therethrough to permit passage of the chopped material through and away from the disc. The assembly comprises a pair of knife holding means for engaging a reversible knife with two cutting edges. One of the knife holding means has a flat knife engaging surface for cooperatively engaging a complementary flat surface of the knife, and the other knife holding means has an arcuate protrusion for cooperatively engaging an arcuate groove in the knife. An improved elongated and reversible knife having opposed bevel surfaces that define the reversible cutting edges, and the knife also having opposite flat surfaces, one of which has an arcuate recess formed in and along that surface for the reception of a complementary shaped portion of a knife holding means.
