New anionic derivatives of mono and polyglycosides which are surface-active agents are described which anionic derivatives have the general formula ##STR1## wherein G is a glycosyl moiety which is derived from a reducing sugar selected from the group consisting of fructose, glucose, mannose, galactose, talose, gulose, allose, altrose, idose, arabinose, xylose, lyxose, ribose or mixtures thereof,
