ABSTRACT:
In the treatment of collagen containing materials for gelatin extraction purposes, conditioning the collagen source enzymatically at pH 7-13 with protease, pH level being selected to match the pH optimum of the protease, for 4-72 hours, at 20.degree. - 40.degree. C.
