The invention relates to a new isolated polysaccharide originating from Streptococcus thermophilus comprising the following repeat structure, and which may be use for the preparation of a food, cosmetic or pharmaceutical composition intended for inhibiting .beta.-galactoside specific lectins. ##STR1##
