ABSTRACT:
An automatic deboning method and apparatus are provided whereby, in a deboning process comprising the steps of: severing shoulder joints off from an upper half of a poultry carcass; stripping wings together with breast meat; then removing white meat, and thus deboning is completed, a high recovery rate is secured while coping with individuality of a work, such as a size and imbalance between the left and right sides, in an automatic manner, and the apparatus comprises: a main tact transport section 29 and an auxiliary tact transport section 30 wherein the main tact transport section 29 includes a main tact transport 20 and a group of 1.sup.st to 12.sup.th stations.
