ABSTRACT:
A method for assessing the properties of dried milk products and hence suitability for use in various processes is described, including the steps of solubilizing a sample of a dried milk product, stirring the sample mixture and assessing the viscosity of the solution. The solvent can be water or a dilute acid buffered to approximately pH 6.5 and the sample mixture heated to at least 50.degree. C. to solubilize the proteins in the dried milk product while the viscosity is measured.
