Cooling water containing an .alpha.-amino acid suitable for cooling steel strips during their continuous annealing and after their overageing treatment. As the .alpha.-amino acid, aliphatic amino acids, aromatic amino acids, heterocyclic amino acids and their hydrochlorides and acetates are used.
