ABSTRACT:
A method and apparatus for cooling foodstuff to a temperature of less than 40.degree. F. within the legally mandated time of 4 hours which consists of a refrigeration apparatus capable of forming a bank of ice and means for circulating water over the ice and through an enclosure in heat conductive relationship with a container holding the foodstuff to be cooled.
