ABSTRACT:
An oligosaccharide fraction containing essentially no G.sub.4 and increased amounts of G.sub.5, G.sub.6 and G.sub.7, is prepared by simultaneously treating a solution containing the desired oligosaccharides with both a baker's yeast and a maltase.
