ABSTRACT:
Disclosed is a process for producing alanylglutamine, which comprises reacting an N-(2-substituted)-propionylglutamine compound represented by the formula (I): ##STR1## where X represents halogen, alkylsulfonyloxy, or substituted or unsubstituted arylsulfonyloxy, with ammonia at a temperature of 60.degree. C. or below.
in accordance with the present invention, highly purified alanylglutamine can be produced in a high yield, without racemization.
